OKMG #10 and reverse OKMG
Action:
I made her dinner last night. Nothing special, but I did make these slammin' mashed sweet potatoes (OMG, they were good - the trick is cream cheese and brown sugar). Oh, and she really loves when I make her powdered ice tea (I know, I know, but the fake shit is the best!), so I made her some when she left the kitchen. It's always best out of the freezer when it's a bit slushy. When she came back, I poured my self some water and asked her to get me some ice and then she saw it. Later I made her some hot tea.

It's been a long time since I made her dinner (I've been very busy the last few months), so she was excited and happy about it. Plus, it's kind of hokey, but she loves when I make her ice tea and especially when I psyche her out like that!

This recipe is good if your potaatoes are a little iffy.
It's very simple, really.
BAsically, peel and chop up the sweet potatoes. Nice size chunks, though, not too small. 1.5 in x 1.5 in is good.
Boil them for about 20 - 30 mins, but the time will very. Boil them until the chunjs are tender and easily pierced with a fork. (Like if you're making reg. mashed potatoes.) Drain.
Mash them with a masher. Then put in a bit of milk, butter and cream cheese. The key is not to put too much milk, because you want them creamy, but not runny. Go easy on the milk and wait to keep adding until you've finished with the cream cheese and butter. Prob 1/3 - 1/2 cup, but again, this may very.
Essentially, you're going to add as much as you want to get a good consistency. I add maybe a quarter stick of butter, but that's adjustable. I added prob a quarter of a small tub of cream cheese (2 oz?).
Just keep tweaking it, but don't over do it.
Finally, when you're pretty good (but not done) add in a few tablespoons of brown sugar. Again, this is subjective. Sometimes I like them sweeter and sometimes not. I find, though, that they are best when they're just a bit sweet, that way you can taste the potatoes and not just the sugar.
Add in a pinch of salt. Not sure why, but it seems to help.
Finally, tweak it all to see if anything needs to be added.
All of this will very depending on the size potatoes you get and how much you're making. This was for 4 small potatoes.
